These savory waffles with parmesan turkey cutlets are a unique take on a popular Italian dish.
Waffles:
- 2 cups flour
- 3/4 cup sugar
- 3 1/2 tsp baking powder
- 2 eggs, beaten
- 1 1/2 cup milk
- 1 cup melted butter
- 1/4 cup chopped basil
- 5 cloves garlic, minced
- 1/3 cup sun dried tomatoes, chopped
- 1 tsp garlic powder
- 1 tsp onion powered
- 1 tsp dried Parsley
- 1 cup shredded parmesan
Turkey Cutlets:
- 1 cup Italian bread crumbs
- 2 eggs, beaten
- 1 tsp garlic powder
- 1 cup shredded parmesan
- 1 tsp cracked pepper and salt
- 2 cups mozzarella cheese
- 2 cups pasta sauce
Directions
Turkey Cutlets:
- Preheat over to 375 degrees
- Season each cutlet with garlic powder, salt & pepper
- Dip each cutlet in egg wash
- Dip each cutlet in breadcrumbs, coating evenly
- Place in greased making dish, top with parmesan cheese and bake until 150-degree internal temp has been reached and crust is crispy
Waffles:
- In mixing bowl, mix all dry ingredients and whisk to blend.
- Add wet ingredients and mix to blended. Fold in garlic, tomatoes and basil
- Place 1/2 cup of waffle mixture in waffle iron and sprinkle with parmesan cheese, cook waffles according to your waffle iron
- Continue until all waffles have been made
Building:
Take one waffle and top with one cutlet, pour pasta sauce over and finish off with a fresh sprig of basil and mozzarella cheese.
